Wholefood cooking classes with Concord Institute

We’re delighted to announce our ‘Inspired by Italy’ series of Heart in a Pot. As the days get longer and we leave the retreating energy of Winter behind, we welcome the energy of Spring to our kitchen. Once again, we find that what’s inside our pots will be a mirror of what’s going on outside in nature. Each meal is an opportunity to feed the body and soul, connecting ourselves with the Earth. In this series, our wholefood teachers draw inspiration from the Italian cuisine.

At the heart of Italian cooking are three things: simple dishes, quality ingredients, and a whole lot of love. In this series, we will explore different methods of cooking that you can adapt to the weather – which tends to be quite changeable at this time of year here in the UK! We will work with a whole range of seasonal vegetables, and you will learn the fundamentals of each of these dishes – the ‘why’ and ‘how’ of combining ingredients.

Heart in a Pot” is a series of 3 interactive classes, taking place on Monday evenings, 7 – 9pm at Concord Institute in Finsbury Park. Numbers are limited to ensure full attention for all students.

The cost is £180 for the entire series of 3 classes, or £65 for a single drop-in session.

Brown Rice and White Bean Soup

Little known outside of Tuscany, this heart-warming dish is traditionally made with arborio rice, beans as well as Italian cheese and sausages. We will be making a vegan version made with brown rice, plump white beans, a rich vegetable stock and a medley of seasonal vegetables like carrots, celery and greens. This a true comfort food, marrying depth of flavour, a creamy texture, and a light touch of spring with fresh green herbs an a a dash of citrus.
