In this one-day workshop you will learn the art and science of sourdough bread making and make a range of delicious breads.

Chef Nicholas Allan has been making sourdough bread for 20 years in his café The Star Anise. You will work with him to understand the five key processes of sourdough bread making:

  • Starter care
  • First rising
  • Shaping
  • Proving
  • Scoring & baking

Over one full day, you will use a 40-year-old Shipton Mill sourdough starter to create a sourdough country loaf, a 100% Rye loaf, classic French baguettes, and sourdough flatbreads. You will leave with plenty of bread samples, your own starter to take care of, and tools and kit to make and bake sourdough loaves at home.

Sourdough bread is an ancient tradition. Its’ slow fermentation transforms the simplest of ingredients into the most satisfying of foods. You will learn the tips and techniques behind making professional bakery-quality loaves in your own home.

A wholefoods lunch will be provided which will be a great opportunity to eat bread, review the techniques and enjoy a hearty meal.

I really enjoy these Heart in a Pot classes. It makes cooking healthy meals really accessible. The deep knowledge of food and seasons come through in the teaching. Even if you have made a dish before, there are cooking techniques to learn in every class and often I find myself cooking and experimenting with new variations of vegetables.
